This week, I tried out a new baked herb chicken recipe for my family, and it was such a hit that they’re already requesting it on repeat. Since we’re cutting back on carbs, I skipped the usual quinoa I’d typically pair with it. However, this chicken would pair beautifully with a variety of sides, like rice or potatoes. We opted for Brussels sprouts, which were incredibly easy and fast to whip up. I like using frozen steamer bag veggies—just pop them in the microwave while finishing up the main course. I added a touch of butter, a sprinkle of salt and pepper, and a generous dusting of Parmesan cheese for extra flavor to elevate the Brussels sprouts.

Bonus points for this meal because it works wonderfully if you are doing the Keto diet or low-carb diet in general. It is a tasty dish to add to your meals that you can eat and still lose or maintain weight.

  • Chicken breast – 2 pounds
  • Olive oil- 4 tablespoons
  • garlic salt- 1 teaspoon
  • garlic powder- 1-2 teaspoons
  • Italian dried herbs- 1-2 teaspoons
  • Dried rosemary- 1-2 teaspoons
  • Dried parsley- 1-2 teaspoons
  • Dried oregano- 1-2 teaspoons
  • FOR THE BRUSSEL SPROUTS
  • Butter- 1 tablespoon
  • Salt- 1 teaspoon
  • Pepper- 1 teaspoon
  • Powered parmesan cheese – 1 tablespoon

Ingredients
  

  • 4 tbsp Olive oil
  • 2 pounds Chicken breast
  • 1-2 tsp Dried Italian Herbs
  • 1-2 tsp Garlic powder
  • 1 tsp Garlic salt
  • 1-2 tsp Dried parsley
  • 1-2 tsp Dried rosemary
  • 1-2 tsp Dried Oregano

Brussel Sprouts

  • 1 tbsp Butter
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1-2 tbsp Powdered Parmesan Cheese

Instructions
 

  • Ensure chicken is fully thawed
  • Pre-heat oven to 350 degrees
  • Put the chicken breast into a large baking pan
  • Brush olive oil onto of the chicken
  • Sprinkle all of the herbs and seasoning on top of the chicken breast
  • Once the oven is pre-heated, place the chicken into the oven
  • Bake the chicken for approximatly 50 minutes or until it reaches 165 degrees internal temperature on the largest piece
  • When the chicken is getting close to coming out of the oven, place the steamer bag of brussel sprouts into the microwave and cook the time it says on the bag
  • Once the brussel sprouts are finished cooking, remove from the hot bag and pour it into a bowl then add the butter and seasons and mix it up
